Australian flavors shape Cornerstone's new menu

Cornerstone, a contemporary bistro by The Arcane Collective, has launched a new seasonal menu inspired by Chef Neal Ledesma’s recent culinary exploration of southwestern Australia. His visit, which included attending the Taste Great Southern food festival, introduced him to the region’s fresh, vibrant produce, and it's now making an appearance in Cornerstone’s latest dishes.
The menu highlights Australian flavors with dishes such as Blue Crab salad with avocado and preserved lemon and Beef Tartare with fermented chili. Main courses include a modern Chicken Parmigiana with mortadella and a revamped Wagyu Steak Sandwich. Plant-based options are available, like the Chickpea Mushroom Croustillant and Homemade Spaghetti with black truffle.
For dessert, Cornerstone has Coconut Lamingtons, an Australian favorite served with mango jam and pandan chantilly. To complement these dishes, the bistro is extending a “buy one, get one free” promotion on all Australian wines from Monday to Friday.
“The trip to Australia with Shane was truly inspiring,” shared Ledesma. “Australia is completely spoiled with some of the freshest produce I have ever sampled – from fruit and veg to seafood and high-quality meats. I was so excited to return to Hong Kong and implement the flavors I had tried into our menu at Cornerstone.”
