Popinjays at The Murray launches a new Italian menu just in time for summer holidays

The Murray, Hong Kong, has a new à la carte menu at its 26th-floor rooftop restaurant, Popinjays. Created by Chef de Cuisine Paolo Tolleretti, the menu features authentic Italian flavors with a modern twist. Chef Paolo, inspired by his Tuscan roots, offers traditional Italian dishes designed for sharing, emphasizing fresh, simple flavors in line with Popinjays’ contemporary, convivial vibe.
Menu highlights include the Gran Crudo, with sustainable seafood like red prawns and oysters, and the Vitello Tonnato, a classic Piedmont dish of chilled veal in tuna sauce. Signature mains feature the Costoletta alla Milanese, a veal cutlet fried in clarified butter and the Branzino, a grilled Atlantic seabass with herbs and lemons.
Pasta offerings include Pappardelle al Brasato with braised beef short ribs and Raviolo al Salmone with crabmeat and salmon. To complete the Italian meal, guests can choose from desserts like the traditional Baba al Rum, a rum-soaked yeast cake stuffed with Chantilly cream.
"I believe in fresh, simple cooking that allows the ingredients to shine," shares Chef Paolo. "For the upcoming months, our Seasonal Menu is going to highlight signature dishes from different regions of Italy, from Puglia to Tuscany and Piedmont. Stay tuned!"
